Breakfast Quiche In An Otherwise Empty Room
Full disclosure: I never really liked Pearl Jam. Growing up, my best friend and her brother were obsessed, so I got to hear a lot of that wailing growl while drinking Zimas & Jolly Ranchers. They would always be so excited to get their hands on a new live recording of some show in Berlin or somewhere -- I was only familiar with the radio singles.
Listening back now, I still don't like them. Go figure! Even the new stuff doesn't do anything for me. Either way, here's a Pearl Jam inspired main dish that is good warm, cold, microwaved, in the morning, in the evening, and just around suppertime. When eggs are in a pie crust, you can eat breakfast anytime. (I know that's reminiscent of the Bagel Bites jingle, but trust me, it's a super rare one-time only Geman encore PJ performance)

Breakfast Quiche In An Otherwise Empty Room
You can either use store-bought crust or whip up your own using any of the one million recipes online. I make my crust using olive oil because then you don't have to roll it out. You'll need:
- 2 cups flour + more for dusting and handling
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon baking powder
- 1/2 cup olive oil
- 1/4 very, very cold water
Whisk up the dry ingredients in a big bowl. Whisk up the wet ingredients in a separate bowl. Add the wet to the dry and stir until it's combined. It will be a bunch of crumbles like this:
Smoosh the dough into whatever pie pan you're using.
A quiche is one of the most versatile dishes you can imagine -- toss whatever you like in there and it's a meal! If you're adding veggies, like zucchini or spinach, def cook them ahead of time to get that water out. This one is my go-to and you'll need:

- 1 whole sweet onion, caramelized
- 2 handfuls of spinach, sauteed and drained
- 1/2 cup feta
- 5 eggs
- 1/2 cup milk
Preheat your oven to 375. Layer your onions, spinach, and feta in the crust. Whisk up the eggs and add the milk. Pour into crust. Put the pie pan on a cookie sheet and pop the whole thing into the oven for 30 minutes. If your crust starts to brown around the edges, just make a little aluminum foil ring to cover it up. Your quiche is done when the center is cooked -- but don't over do it! Eggs continue to cook for a little bit after you pull them out of the oven, so go for like 98% done and you'll be golden.
This will keep in the fridge for a few days and freezes well. Great for a quick lunch or dinner -- just add a salad. How frawnch!
