L7 Ingedient Salsa

I first heard about L7 because they were on the Lalapalooza lineup in 1994 with every other band that was that new kind of cool we were getting into. Donita Sparks and Suzi Gardner were very brash, very scary, and very much my cup of tea. They put a melody to all the anger that was bubbling up inside and kept me in the loop about the current things to be pissed off about.

They showed their live performances on 120 Minutes every once in a while and they were always amazing. I wouldn't necessarily take all of their advice on food,

but this recipe belongs to them. And I listened to Bricks are Heavy while I was chopping, so there's that. It still holds up.

L7 Ingredient Salsa

You'll just need, duh, 7 things:

Pineapple, either canned or fresh
Lime, juiced
Jalapeno, chopped
Red Onion, chopped
Tomato, squeezed and chopped
Cilantro, chopped
Cumin

You don't need a set amount of any of these things -- except for the cumin. Unless you're making a ten-gallon drum of salsa, one teaspoon or so should be fine. You like it spicy? Add more jalapeno and leave the seeds in.

Just chop it all up however you like, in whatever size pieces you like, and season with lime juice and cumin. Taste it and stick it in the fridge until you're ready to dig in. Ideally, this will sit for about an hour to let the flavors combine.

I ate this on top of Matthew Sweet Potato Tacos, but it is equally good on a chip.

This will keep in the fridge for a week or so, but mine disappeared way before that. Try smooshing a ripe avocado in it to made a fancy pants guacamole.
